This open-fronted shop is the only specialist poultry butcher remaining in a market famed for its poultry since the Middle Ages. Established in 1881, the current owner, Mr Butcher (naturally), is proud of his unusual selection of game, which includes widgeon, woodcock, mallard, guinea fowl and rabbit when in season (August to February). Wild bore is sold marinated and diced and there are haunches of venison wrapped in bacon, ready to be thrown straight into the oven
