Taking the robust flavours of Spain and mixing them with the exotic spices of North Africa and the Middle East, Moro's inspiration comes from across the southern Mediterranean - where the Hispanic meets the Islamic and herbs meet spice. Particularly recommended is the aubergine puree topped with caramelised ground lamb.
