The Sugar Club is arguably London's top fusion eaterie, along with sister restaurant Bali Sugar. In these large Soho premises, minimalist decor and a calmly chic ambience conspire to make a stylishly neutral locale in which to experience the artistry of New Zealand chef Peter Gordon. The cuisine touches on Gordon's homeland but it is the creative use of unusual and eclectic combinations of foods, tastes and ideas flitting between the continents that truly characterise and elevate the Sugar Club. Playful ensembles, authentic ingredients and a subtlety of flavours make a sensational impression. A prime example is fried halibut coated with chopped shiso leaves with a salad of new potatoes, baby spinach, red cabbage, galangal and truffle.
