Probably the best and healthiest Indian restaurant in London, Vama ('the essence of woman' in Sanskrit) differs from many Indian restaurants in London in its decor. The warm beige and gilt-colourings give a grand yet warm welcome at this Chelsea favourite, and it attracts as many locals as it does the business and glamour-crowd. The food is surprisingly light and flavours are beautifully mixed, giving a complex flavour, which is hard to match and there are many vegetarian options are available. The patiala baingen shahi (baby aubergines in garlic and tomatoes) is divine. Vama prides itself on taking a healthy and contemporary approach to cooking, and uses unusual spices and a wood-fired clay oven to achieve the desired effect.
